Here's some I can think of.

    Moab:

    Professor Creek and maybe Entrajo.

    San Rafael Swell:

Upper Iron Wash or Zero Gravity.

I'd also say the Black Boxes and Muddy Creek, but the water is probably still too high.

    White Canyon:

Fry, Gravel, Long, Short, Cowboy, or Black Hole.

Greater Robbers Roost and Henry Mountains Area:

Lower Maidenwater or Crescent Creek Slot. Maybe Woody? I haven't done that one.

    Escalante:

Boulder Creek, Death Hollow, 40 Mile/Willow, Choprock, and Neon (bugs will be bad along the river).

Way short, but so much fun...and very scenic with a class C feel (minus the actual class C) ...
Benson Creek Canyon, up near Brian Head
(come to think of it, depending on snow melt conditions, may actually be class C so beware of that if its not exactly what you are looking for...easy to check the flow of the last waterfall before committing to the shortish hiking up the scree hill).

Just back from Cedar Mesa. Gravel and the Black Hole have lots of clean(ish) water right now.

What were the water levels like? I went back in early March and that was a big mistake. I can only assume the snow melt hadn't yet flooded the canyon with water.

Yea, way too late in the year. I hear the ideal time is New Year's Day before it warms up too much.
